Quinoa Kale Salad

It seems that lately that we’re hearing quite a bit about superfoods

 Well, I’ve taken 2 superfoods and combined them into a healthy salad loaded with veggies and tossed with a lemony dressing

Wash, dry and remove stems from about 2 cups of fresh kale

I find the “baby” kale works best raw in salads because it’s more tender,

but “grown-up” kale works too… just chop finely

Kale makes it onto the superfood list because it’s packed with lots of nutrients and antioxidants

which mean… super healthy!

Finely chop kale and place in large mixing bowl

Wash and dry 2 cups of grape tomatoes.  I left them whole, but you can slice in half if you’d prefer

 Fresh corn isn’t in season here yet so I used frozen, but you can bet as soon as it is, that’s what I’ll be using!

Snip a small bunch of scallions into 1/2 inch pieces

I usually find kitchen shears are the quickest way to do this

Combine all ingredients in the large mixing bowl

Next, let’s make the easy Lemon VinaigretteZest and juice one whole lemonI like to use mason jars to mix salad dressing, but you can also use a cruet
Add in 3 tablespoons of extra virgin olive oil, 1 tablespoon water &
1 teaspoon each of honey, kosher salt & cracked black pepper
Shake it!!

Pour about a third of the Lemon Vinaigrette over salad in mixing bowl and toss well to combine

Now add in your second superfood… 1 cup of cooked Quinoa

 Quinoa is considered a superfood because of it’s high fiber and protein content

Not to mention it’s super tasty!

Give everything a final toss, add in more dressing if needed

Quinoa Kale Salad pairs well with any main or can easily stand alone

Ingredients

 2 cups baby kale

2 cups grape tomatoes

1 cup corn

1 cup cooked quinoa

 Lemon Vinaigrette

1 fresh lemon, zested and juiced

3 tablespoons of extra virgin olive oil

1 tablespoon water 

1 teaspoon honey

1 teaspoon kosher salt

1 teaspoon cracked black pepper

Directions

Finely chop kale; wash and dry 2 cups of grape tomatoes and thaw corn if using frozen; snip a small bunch of scallions into 1/2 inch pieces; combine all ingredients in large mixing bowl

Zest and juice one whole lemon; add in 3 tablespoons of extra virgin olive oil, 1 tablespoon water & 1 teaspoon each of honey, kosher salt & cracked black pepper; shake well

Pour about a third of the Lemon vinaigrette over salad in mixing bowl and toss well to combine; add in quinoa

Give everything a final toss, add in more dressing if needed
