Show me how to fillet a Pork Roast

Filleting a pork roast is relatively easy
It is also a way of getting great flavors as you can stuff the roast with any number of your favorite ingredients
However if your not comfortable with your knife skills, ask a butcher to do it for you
I start by making a small slit along the long side at the top of the roast in the fat cap about 1/2 to 3/4 inches down
As you slice the meat, slowly peel the pork back and away as you work
Work slowly taking care to keep your fingers out of the way as you slice and pull the meat away
Take care to try to maintain the 1/2 to 3/4 inch thickness as you go to ensure even cooking
Don’t fret to much about score marks
It may not look perfect, but I guarantee it will taste perfect!
And there you have it!  A nice fillet of pork to stuff with whatever you can imagine
