Nothing puts the “happy” in happy hour like this fizzy cocktail made with spicy ginger beer, citrusy lime and fresh mint

What makes a drink a mule?

A mule is a cocktail that is made with ginger ale or ginger beer and citrus juice.  We’re assuming that it includes the name “Moscow” due to the inclusion of vodka which is said to have been created in Russia.  Never mind that I’m using vodka from Sweden. 😝

I’d like to think it’s called a mule because of the “kick” you get from the ginger beer and fresh citrus!  No matter, let’s get drinking

You’ll need Ginger Beer (this is a non alcoholic soda – we like the Saranac brand the best), vodka, fresh lime and fresh mint sprigs

 These are traditionally served in copper mugs

The mugs really do keep the cocktail super chilled and not to mention they look cool!

Chill the mugs in the freezer

When you’re ready for happy hour, fill the cups with ice

Each cocktail gets 6 oz Ginger Beer, 2 oz vodka and a healthy squeeze of fresh lime juice

Give a light stir just to mix the ingredients – you don’t want to lose your bubbles!

Serve with fresh mint

Ingredients

12 oz bottle of Ginger Beer

4 oz vodka

1/2 fresh lime, squeezed

fresh mint for serving

Directions

Freeze the copper mugs and when ready for serving, fill with ice

Add 6 oz Ginger Beer, 2 oz vodka and a healthy squeeze of fresh lime juice to each mug

Give a light stir just to mix the ingredients

Serve with fresh mint
