Easy Guacamole

Creamy, ripe avocados lend a buttery texture and when simply combined with zesty lime and the bright, freshness of cilantro make a deliciously easy guacamole

My kids love “guac” as they call it.  If my husband and I are not quick enough, they eat ALL of it before we even get to taste it!

 I’ve tried many versions but like this simple & fresh recipe the best

Gather together a couple of ripe avocados, a garlic clove, fresh cilantro, fresh lime and kosher salt & black pepper

Years ago, I bought my husband a “molcajete & tejolete” or mortar and pestle.  Not only is it a useful tool, it looks decorative on our counter

I always use this kitchen tool to make our guacamole, but you can just as easily make in a bowl

Mash up the peeled garlic clove with about 1/2 teaspoon of kosher salt & combine until it makes a paste of the garlic

Add in about 1/2 of a cup of fresh cilantro and mash some more…

Smells good already!

Next, add in the flesh of 2 avocados

How do I know when an avocado is ripe??

If the avocado yields to gentle pressure you know it’s ripe and ready to eat. It’s also helpful to pick off the stem and look at the color underneath. If it is green or yellow, that means the avocado is ripe. If the stem resists being removed, then it’s likely under ripe.

 Here’s the easy way we like to cut open avocados

Start by slicing the avocado completely lengthwise and then twist the two halves apart

 Once the two halves are apart, tap the pit with the blade of a knife, twist counterclockwise then pop it right out

 Score each half of avocado lengthwise and then crosswise.  A butter knife is a safer bet but if you’re daring (or nonsensical) like me, just be sure to cut lightly so you don’t cut your hand

Scoop the cubed avocado flesh out with a spoon

And there you have it!  Avocado chunks!

Scoop the avocado chunks into the bowl and use a fork and knife to cut it up into smaller pieces

Some recipes call for mashing the flesh, but I like guacamole to be a little chunky

Make sure you are getting the garlic paste and cilantro mixed in thoroughly

 Once combined, squeeze in about a tablespoon of fresh lime juice
and season to taste with more kosher salt if necessary and black pepper

Serve with a sprinkle of chopped, fresh cilantro and stand back while it disappears!

You can add in some chopped jalapenos or cayenne pepper to make it a little spicy.  I usually serve guacamole with something hot & spicy so I leave it mild as a cooling agent.  But you be you!

Ingredients
2 ripe avocados
1 garlic clove
1/2 cup fresh cilantro
fresh lime juice
kosher salt
black pepper

 

Directions

Mash up a peeled garlic clove with about 1/2 teaspoon of kosher salt; combine until it makes a paste of the garlic

Add 1/2 of a cup of fresh cilantro; mash some more

 Remove the flesh from 2 avocados; scoop the avocado chunks into the bowl and use two forks to cut it up into smaller pieces
Once combined, squeeze in about a tablespoon of fresh lime juice; season to taste with more kosher salt if necessary and black pepper
Serve with a sprinkle of chopped, fresh cilantro
