Ham & Cheese Breakfast Burritos

These Ham & Cheese Breakfast Burritos are great for both a relaxing Sunday at home or a busy morning on the go!

I started with our recipe for Cheesy Herbed Eggs

You can choose whatever meat you’d like to add… breakfast sausage, bacon or ham.

I chose a 1/2 pound ham steak that I browned in a pan for about 4 minutes per side then slice into 1/2 inch pieces

Stir the ham into the scrambled egg mixture and cook until the desired doneness of the eggs

I like to cook them a little less than I would normally because they’ll go in the oven for a few minutes once rolled into burritos

Speaking of the oven, preheat to 350 degrees

There’s shredded cheddar in the Cheesy Herbed Eggs, but my family likes the addition of American cheese in their burrito

Place about 2/3 of a cup of the egg mixture down the center of the tortilla over the cheese

Fold each end over and roll

Place the rolled burritos seam side down on a sheet pan lightly sprayed with cooking spray

Bake at 350 for 8-10 minutes, until the cheese is melted and the tortilla is warmed

This makes 8 Ham & Cheese Breakfast Burritos

There you have it!  All-in-one-breakfast!

Simply Sundays hint: Freeze the burrito before the baking step and this is a great quick breakfast for your rushed morning before school or work!

Defrost for about 30 minutes or put in the fridge to defrost the night before

Bake the defrosted burrito for 12-14 minutes on 350 degrees until heated through

Ingredients

Cheesy Herbed Eggs

1/2 pound ham steak (or cooked bacon or breakfast sausage)

8 soft tortillas

8 slices of cheese (American, swiss, muenster – whatever you like!)

Preheat oven to 350 degrees F

Prepare recipe for Cheesy Herbed Eggs
