Broccoli Rabe is one of those vegetables that simply gets a bad rap
The biggest complaint I often hear is that it is bitter
Well, I learned a method of cooking broccoli rabe from my friend Melissa, that removes the bitterness and makes this a fantastic addition to your home menu
We use broccoli rabe as a side, in pastas and even on homemade pizza!
So here is the secret…..are you ready?
Yep…that’s it. Blanch your broccoli rabe in water with lemon juice and kosher salt and open a new door in the kitchen!
Trim the excess stems off of the broccoli rabe. Put 4 cups of water into a pot, squeeze in the juice of 1 lemon and add 1 tablespoon of kosher salt
Bring this to a rapid boil and drop in your broccoli rabe, cook for no more then 2-3 minutes and remove to an ice bath
Drain and chop
You will need a 1/2 teaspoon of crushed red pepper and 2 garlic cloves chopped
Heat 2 tablespoons of extra virgin olive oil to a pan over medium heat
Add in your garlic and crushed red pepper
Toss and cook 5-6 minutes or until the garlic is soft but not browned
Add in your broccoli rabe
Toss and cook 5-6 minutes, season with salt and pepper to taste
This is as a delicious and healthy side to any meal!!!

Simply Sundays! ~ Sauteed Broccoli Rabe
2 bunches of broccoli rabe
4 cups of water
1 lemon juiced
1 tablespoon of kosher salt
2 garlic cloves
1/2 teaspoon of crushed red pepper
2 tablespoons of olive oil
salt and pepper to taste
Trim excess stems from the broccoli rabe. Place 4 cups of water in a pot, squeeze in the juice of 1 lemon, add in 1 tablespoon of kosher salt. Bring to a rapid boil
Add in your broccoli rabe and blanch for no more then 2-3 minutes. Remove from the boiling water and immediately submerge in an ice bath. Drain and chop
Heat 2 tablespoons of olive oil in a pan. Add in 2 garlic cloves, peeled and chopped and a 1/2 teaspoon of crushed red pepper. Cook 5-6 minutes until the garlic is soft but not browned
Add in your broccoli rabe and toss and cook another 5-6 minutes. Season with salt and pepper to taste
