Lemon Poppy Waffles

These light & crisp waffles have a tart lemony flavor and are speckled with poppy seeds

We usually like to make enough waffles or pancakes on Sunday mornings to have leftovers to use during the week but there are never, ever left over Lemon Poppy Waffles!

Let’s whip these up!  In a medium bowl, combine the dry ingredients

1 1/2 cups flour, 2 teaspoons baking powder,  1/2 teaspoon salt, 1/2 teaspoon baking soda

I like to use a whisk to combine the dry ingredients because it incorporates some air into the mix

Next, zest a lemon and add into 3 tablespoons of white sugar until stir thoroughly combined

   Whisk the lemon sugar mixture into the dry ingredients

Now for the liquids…

Combine 2 eggs, 1/4 cup canola oil, 1 1/4 cups of milk,  juice of a fresh lemon (about 3 tablespoons), 1 teaspoon vanilla & 1 tablespoon melted butter  in a medium bowl and stir well

Pour wet ingredients into the dry and stir to incorporate

Don’t over mix, that will make the waffles tough.  We want them light and fluffy

Pour in the poppy seeds and give a few final stirs. If you have a few lumps, that’s OK

At this point, I like to let the batter sit while I get my waffle iron heated up

The batter actually bubbles a little and smells oh-so-lemony

Cook your waffles according to the instructions for your waffle iron

 I use about 1/3 of a cup of batter for each waffle for my particular waffle iron and they come out perfect

Lemon Poppy Waffles are so tasty all by themselves, you barely need to add any toppings, but should you choose to…

You can serve these fluffy, lemony waffles with maple syrup or any your syrup of choice

OR you can simply add a dollop of Fresh Whipped Cream and fresh berries

For the dry:

1 1/2 cups flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

zest of 1 fresh lemon

3 tablespoons white sugar

1 tablespoon of poppy seeds

For the wet:

2 eggs

1/4 cup canola oil

1 1/4 cups of milk

juice of a fresh lemon (about 3 tablespoons)

1 teaspoon vanilla

1 tablespoon melted butter

Toppings of choice

Directions

Pour wet ingredients into the dry and stir to incorporate being careful not to over mix; pour in the poppy seeds and give a few final stirs

Let the batter rest while you heat a waffle iron; cook your waffles according to the instructions for your waffle iron

Serve with syrup or toppings of your choice
