Swiss Cheese Squares

I can’t remember a Thanksgiving or New Year’s Eve without Swiss Cheese Squares

My family has been making these little appetizers for-EVER!

I’m not even sure where the recipe is from.  Swiss Cheese Squares have just always been in our lives

Four simple ingredients, a short amount of prep and less than 12 minutes of cook time

Sounds like this recipe needs an invite to your next party

You’ll need one 6 oz. bag of shredded Swiss cheese, 1/2 cup mayonnaise, one small thinly diced onion, party rye cocktail bread

Mix the Swiss, thinly diced onion and mayo in a bowl until combined

This mixture will be thick and seem like it needs more mayo, but just keep stirring.  You don’t want a greasy end product

Measure out one tablespoon of the Swiss-mayo mixture and spread onto each party rye with an offset spatula

Spread evenly and try to cover the entire square of bread

Arrange Swiss Cheese Squares on an ungreased sheet pan and place into a 400 degree oven

Keep an eye on the squares, but it usually takes about 7-9 minutes to get the bread toasty and the cheese bubbly

Ok.  Now comes the part that my sister and I need to be kept honest with

The broiling!!

Broil for 2 minutes and WATCH them closely

There’s a fine line between golden brown, bubbly deliciousness and burnt like toast.  Believe me, I know

Serve the Swiss Cheese Squares as soon as they come out of the oven

You may want to double or triple this recipe

I’m just saying this from experience because these tangy, cheesy bites will disappear quickly
