Sauteed Parmesan Zucchini

This is a quick, tasty way to get a delicious veggie on the table in under 20 minutes

Start with 2 large zucchini – about a pound and a half

Trim off the ends & slice into 1/2 inch rounds

Drizzle with olive oil and sprinkle with kosher salt & black pepper, mix well

Saute on medium low for 12-15 minutes, stirring occasionally

Once softened and slightly browned, sprinkle 1/4 cup parmesan over the zucchini

Stir to combine, saute an additional 3-5 minutes and serve

Ingredients

2 large zucchini (1 1/2 pounds)

Drizzle of olive oil

1/4 cup parmesan
