One of our favorite restaurants has this Smoked Salmon Sandwich on their lunch menu and it’s what I order almost every time
Fresh smoked salmon, briny capers, zesty lemon, crisp cucumbers… so good I had to start making it at home
The key is fresh ingredients. Most grocery stores will have a decent selection of good quality smoked salmon
I like to set all of the ingredients up first on a board and then assembly is a breeze!
First step is to mix up your scallion cream cheese
I let an 8 oz block of cream cheese sit out until it reached room temperature. Slice up 1/2 cup of the dark green scallion tops and stir into softened cream cheese. Once mixed, chill in the fridge while you assemble the rest of the ingredients

Lightly toast a baguette and cut into 4 sections
Thinly slice seedless English cucumber & fresh lemon
Assemble 8 oz smoked salmon, dill, capers, kosher salt, black pepper and the scallion cream cheese
Spread both sides of the baguette with the scallion cream cheese and add a layer of cucumber. I like to salt and pepper the cuke side
Top the cucumber layer with a healthy serving of smoked salmon and sprinkle of dill
I like to press the capers into the cream cheese on one side so they don’t roll off. You can rinse your capers before adding to your sandwich, but I love the briny flavor, so I add them in un-rinsed
Lastly, squeeze fresh lemon over the salmon side & carefully close both sides
Best part is this sandwich can be served for brunch, lunch or dinner!

Ingredients
Scallion Cream Cheese:
8 oz cream cheese, softened
1/2 cup scallions
8 oz smoked salmon
Thinly sliced seedless cucumber
Thinly sliced lemon
1 baguette cut into 4 sections
Fresh or dry dill
Kosher salt and black pepper
Capers
Directions
Mix cream cheese and scallions, chill
Lightly toast baguette sections
Thinly slice cucumbers & lemons
Spread both sides of the baguette with the scallion cream cheese and add a layer of cucumber; salt and pepper the cucumbers to taste
Top the cucumber layer with 2 oz of smoked salmon; sprinkle with dill
Press the capers into the cream cheese on one side; squeeze fresh lemon over the salmon side & carefully close the sandwich
