Apple and Brie Stuffed Pork Chops

What goes better with pork than apples?

How about apples and brie!

 Nothing says a delicious  dinner like these thick cut pork chops stuffed with apples and brie!

So let’s start with the filling, you will need 1 granny smith apple, skinned, cored and diced.  I medium onion (I had red), peeled and diced, 2 garlic cloves chopped,  1/2 cup of bread crumb, kosher salt and ground black pepper

Add 2 tablespoons of extra virgin olive oil to an oven proof pan over medium heat

Add in your apples, onion and garlic

Cook 10 minutes or until the apple and onion have softened and start to become translucent, don’t over cook though, as these will cook more in the oven

Add in your breadcrumb and stir to combine, sprinkle with about 1/4 cup of fresh chopped parsley.  Remove from heat and set aside

Here I have 4 thick cut boneless pork chops, trimmed of excess fat.  I’m going to slice a pocket into them without slicing all the way through

Here I start stuffing the pork chop using about 3-4 tablespoons of stuffing per chop

I like to put 1-2 tablespoons at a time in each chop and then start back over so you know you have enough for all of them

Next up is the brie.  I’m using a 4 ounce chunk of brie that I have removed most of the rind from and sliced into strips

As with the stuffing, put 2 slices of brie in each chop, then start over trying to keep an even amount

Squeeze the chops closed

Now for the breading.  I use about 1 -1 1/2 cups of Panko breadcrumb (Japanese breadcrumb) seasoned with salt and pepper

Here is the cool part

Instead of an egg wash to hold the Panko on the chops, I’m going to brush each chop with some melted down apricot preserves

This works really well with the filling and adds an unexpected flavor pop to the chop

Press your chop down into the Panko and brush the other side with preserves

Flip and repeat.  When they are all coated set aside

Preheat your oven to 350 F

Heat 2 tablespoons of olive oil in an oven proof pan (I’m using my trusty cast iron)

Place your chops in the pan and sear 5-6 minutes or until a nice golden brown crust forms

Flip your chops over and place into the oven for 20-25 minutes or until a thermometer reads 155-160 F

Remove from the oven and set aside to rest at least 10 minutes before slicing

Ingredients

1 – 1 1/2 cups of Panko breadcrumb

1 cup of apricot preserves (melted down)

4 tablespoons of olive oil

  1. I never, NEVER leave comments. This is literally my 1st one. I’m planning on making this tonight, so I can’t say anything to the final product, though, how can’t it be good! What I did want to share is how amazing I think your recipe instructions are. I’m a big fan of the kitchen, cause they give step by step w/ images, but your instructions might be even better! After searching hundreds of recipes online, this is the first I’ve come across your site, and now that I’ve been here, and seen how well organized the recipe navigation is, and how clear the directions are, I know I’ll be coming back again and again.
