Broiled Cod

Cod is a delicious and meaty white fish

Typically cod comes into the store frozen, but it is still really good to work with, however if you can get a hold of some fresh cod, even better!

This is a simple recipe that lets the fish do most of the talking

Here I have 2 pounds of cod

I have cut the fish into equal size chunks.  As you get closer to the tail of the cod the fillet gets thinner.  I just fold the thin section under to make the tail fillets a bit thicker for more even cooking

Let’s keep this fairly simple

You will need the zest of 1 lemon, 2-3 tablespoons of melted butter, 1 garlic clove grated, 1/4 cup of fresh parsley, 1/2 teaspoon each of kosher salt, ground black pepper and smoked paprika

Put all your ingredients into a bowl and whisk them together

Place your fillets on a sheet pan lined with parchment paper

Brush on your sauce

Broil 4-5 inches from the heat for 12-15 minutes or until a knife slides easily through the thickest part of the fish

Serve drizzled with the pan juices
