Turkey Burgers

Burgers!

Topped with just about anything (or everything), you know you just love to bite into a nice juicy burger!

Here is a Simply Sundays take on a turkey burger

I’m making a big batch so I’m using a family pack, 3 pounds of ground turkey (adjust recipe accordingly)

So you will need 1 cup of plain bread crumbs (more if needed for binding the meat), 1/2 cup of ketchup, 2 tablespoons of Worcestershire Sauce, 2 tablespoons of Gravy Master, 2 large eggs, 1 tablespoon of Dijon mustard, 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

Add your breadcrumbs, ketchup, Worcestershire Sauce and Gravy Master to your meat

Whisk your eggs first (makes combining easier), add them to the meat along with your mustard and seasonings

Start folding the mixture together with your hands (a mixer is fine, just don’t over mix the meat, it can become dense)

Work gently until well combined

Line a sheet pan with parchment paper that was lightly sprayed with cooking oil

My wife brought home these deli style rolls (yum), so I’m making the burgers fairly large.  You want the burger to fit on the roll without leaving a lot of bread hanging empty over nothing but air

Keep this in mind whether using large rolls (like I am) or normal store bought burger rolls, especially when using beef, since it can shrink more as the fat cooks out

Turkey tends to shrink a bit less, so I’m using a 3/4 cup measure

Fill the measuring cup and dump the meat mixture out onto the parchment, then come back, roll the meat a little, then flatten with the palms of your hand

Warning , if your burger is not a perfect circular disc it won’t taste as good (Just kidding, it really doesn’t matter)

Sprinkle each burger liberally with salt and pepper since there is also salt and pepper in the mixture as well.   I like to chill the burgers for up to 30 minutes to make them easier to work with

I was originally planning on grilling these but the weather decided against it, so the next best thing?  A cast iron pan!

Grease your pan with some cooking spray and heat until it starts to smoke very lightly

Place your burgers seasoning side down, spaced apart and season the backside

Cook 4-5 minutes then flip and cook 3-4 minutes more (these are turkey so they need to cook through, adjust the times according to the type of meat your using)

Top with your favorite cheese, cover and cook for 1 minute more

Remove the burgers from the pan and set aside for 5 minutes, the burgers will rest reserving their juices and the cheese will melt more as they sit

We toasted the rolls and sliced up your normal toppings

Top them with what you like and jump in!
