Beer Brats

Bratwurst are great pork sausages that you can fry, bake and grill and are always sure to please a crowd

 Our bratwurst start their day cooking in a nice relaxing beer, onion and butter bath (they love this)

Now you can do this step in a foil pan,  in the oven or on the grill, or if your pressed for time, in  slow cooker which is what we are going to do

So just place your brats in the pot in a layer.  I have 10  sausages here

Next up you will need some simple ingredients

 At least 2 Pilsner type beers, 1-2 lagers (little bit darker, more robust), 1 medium onion, 1 stick of butter, and 1 teaspoon each of kosher salt, ground black pepper and garlic powder

Peel and chop your onion

Cut your butter length wise, then in half, then into chunks

Sprinkle the onion, butter, salt, pepper and garlic over your brats

Lets start pouring in the beer (yeah!)

I like to use a mix of beer, however what your really looking for here, is to cover the brats completely

Now, this next bit may terrify you

Beer may be left over

My advice, get a glass and drink it!

Cover your brats and cook on high for at least 2 1/2  hours in the slow cooker

This is the Instant Pot slow cooker/pressure cooker we use

At this point the brats are cooked fully and infused with a great beer flavor

Time to eat?

Nope

We are not done yet.  Let’s give them a sear for some extra flavor

You can hit the grill at this point, the broiler as well, I’m using a cast iron pan

Once they have a nice brown sear,  I put them back in the beer bath to rest and absorb even more great flavor!

Lets serve them with some of the onions they have been cooking in and your favorite toppings!

10 bratwurst sausages

1 medium onion chopped

1 stick of butter cut into chunks

1 teaspoon each of kosher salt, ground black pepper and garlic powder

2 Pilsner style beers

1 – 2 Lager style beers

Directions

Place your brats in a layer in your slow cooker

Peel and chop your onion.  Cut your butter length wise, then in half, then into chunks

Sprinkle the onion, butter, salt, pepper and garlic over your brats

Next, pour in your 2 Pilsner beers and a Lager.  If the sausage is covered, your good to go. If not, then add some more Lager

Cook on high for 2 1/2 hours.  Remove your brats and sear for about 3 minutes on both sides in a cast iron pan.  Place back into the beer bath until your ready to serve
