Party Frittata

Now I call this party frittata because I’m getting a lot out of it, so it is good for a gathering

This frittata will FEED your guests, not entertain them, or end up wearing a lamp shade (just so we are on the same page about the party part)

I’m starting with 12 ounces of thick cut bacon, that I will cook in a sheet pan at 350 F until crispy (I do turn these a few times)

Once you cook bacon on a sheet pan in the oven, you will never fry it again, trust me

Okay, while the bacon cooks let’s get the rest of the ingredients going

I used 12 large eggs here, and whisked them vigorously in a mixing bowl

Let’s get some more ingredients together, you will need 3 scallions, 1/4 cup of parsley, 8 ounces of cheddar, 2 teaspoons each of garlic powder and onion powder, 1 teaspoon of ground black pepper and 1/2 teaspoon of kosher salt

Remove a half inch off the bottom of the scallions as well as a half inch off the top and discard.  Dice the scallions and parsley

Add them as well as the seasonings into the eggs, lightly whisk to incorporate

Grate your 8 ounces of cheddar

I’m also adding about 8 ounces of fresh baby spinach

Give this a nice chop as well

Fold this together in the egg mixture

Let’s not forget we made bacon

I put the bacon in a bowl with some paper towels to absorb some of the grease

Lets chop this up and add to the egg mixture

Preheat your oven to 350 F

Take 2 tablespoons of butter and place them in your pan, place them in the oven until melted, swirl the butter around the pan to coat

Typically I make frittatas starting on the stove top, so I would be using a frying pan, where I would melt the butter, add the egg mixture, let it set up a little, and transfer into the oven

Melting the butter in a baking dish, in the oven, is allowing us to get the same effect on a larger scale, you want the eggs to set right away on the edges, to allow you to be able to remove the frittata easily after cooking

Once your pan is hot enough to set the egg mixture, pour them in.  Move the ingredients around to evenly disperse them and place ther pan back into the oven

Bake for 40-50 minutes or until the eggs are set and a knife comes out clean when inserted in the center

Let rest 10- 15 minutes before slicing

Slice evenly lengthwise, then evenly crosswise, serve warm or at room temperature

We were able to get 16 squares out of this delicious baked frittata!

Place on a serving platter like this one

Ingredients

12 ounces of thick cut bacon

8 ounces of cheddar cheese

8 ounces of fresh baby spinach

Directions

Cook  bacon in a sheet pan at 350 F until crispy.  Remove to a bowl with paper towels to drain

Whisk 12 large eggs in a mixing bowl.  Remove a half inch off the bottom of the scallions as well as a half inch off the top and discard.  Dice the scallions and parsley, add them as well as the seasonings into the eggs, lightly whisk to incorporate

Shred your cheese and add to the mixture.  Fold to combine ingredients.  Chop up 8 ounces of baby spinach and add to the bowl.  Chop up your drained bacon and fold that in as well

Place your tin pan in a 350 F preheated oven with 2 tablespoons of butter.  Allow the pan to heat enough to melt the better completely.  Swirl the butter around the pan coating as much as you can.  Immediately pour your egg mixture into the hot pan so the eggs will start to set.  Move the ingredients around to evenly disperse them and place back into the oven

Bake for 40-50 minutes or until the eggs are set and a knife comes out clean when inserted in the center.  Serve warm or at room temperature
