Pasta with Sausage and Lentils

We have been making this particular dish for years, in fact if I remember correctly, we had this at a restaurant once and liked it so much we had to re-create it at home

Don’t tell anyone this (shhh), but this meal has opened my eyes to lentils and how good they are

So let’s start there…take 1 cup of lentils that you have rinsed and picked through

Picked through you ask?

Yes….sometimes they have small stones and such so just give them a once over then cover them in 2-3 cups of water….bring to a boil then lower your heat to a simmer and cook 30-35 minutes or until just tender.  Remove and drain in a colander and set aside

While the lentils are cooking get a pot of salted water going and cook up your favorite pasta according to the directions

Let’s get going with the meat sauce,  you will need 1 large onion and at least 3 garlic cloves

Peel and chop both

Saute them in about 2 tablespoons of extra virgin olive oil

This next part is optional but I like to add 2 heaping tablespoons of sun dried tomatoes packed in oil

I feel this adds some depth of flavor

Cook all this down until the onions and garlic are tender, 6-8 minutes

Next you will need around 5-6 hot sausage links or at least a pound

Cook another 10 minutes or until nicely browned, breaking up the sausage into smaller pieces as you go

Once your sausage is mostly cooked add in your reserved lentils and stir to incorporate

Now for some liquids.  You will need 1 cup of dry red wine (like a Cabernet) and 1 cup of chicken stock

Add in your cup of wine

Bring the mixture to a boil,  reduce heat and simmer around 6-8 minutes to cook off the alcohol from the wine and deepen the flavor

Now add your stock, return to a boil, reduce back to a simmer  and cook another 10 minutes to incorporate the flavors

Okay, it’s pasta time!

Add about 2 tablespoons of extra virgin olive oil to your cooked and drained pasta

Follow this with about 2/3 cup of grated cheese and a cup of chopped fresh parsley, then give it a stir

Fold in the Sausage mixture and season to taste with kosher slat, ground black pepper and crushed red pepper flakes (optional)

We served this with rigatoni, topped with additional chopped fresh parsley and grated parmesan cheese

Ingredients

1 cup of dry lentils (cooked until tender)

1 large onion

3 garlic cloves

2 tablespoons of sun dried tomatoes (optional)

6 hot sausage links, casings removed

1 cup of dry red wine

1 cup of chicken stock

2/3 cup of grated parmesan

1 cup of fresh chopped parsley

1 pound of favorite pasta

kosher salt and ground black pepper to taste

crushed red pepper flakes (optional)

2 tablespoons of olive oil plus 2 more for the pasta

Directions

Rinse lentils and pick for any stones, cover in water and cook until tender about 30-35 minutes, drain and set aside

While the lentils are cooking, get a pot of salted water boiling and cook 1 pound of your favorite pasta according to the directions

Peel and chop onions and garlic and cook over medium heat.  Add 2 heaping tablespoons of sun dried tomatoes into the pan and cook 6-8 minutes or until the onions and garlic are tender

Remove the casings from the sausage and add to the pan, cook until browned, breaking the sausage pieces up as you go into smaller bites, about 10 minutes

Add your lentils in and stir to incorporate, then add in cup of dry red wine.  Bring to a boil and cook 6-8 minutes or until the alcohol cooks off, then add in your chicken stock and bring back to a boil and cook for another 10 minutes

Add 2 tablespoon of olive oil, 2/3 cups of grated parmesan and 1 cup of fresh chopped parsley to your cooked and drained pasta.  Give it a stir

Add in your sausage mixture and fold to incorporate

Sprinkle with kosher salt, ground black pepper and crushed red pepper flakes (optional)

Serve with additional chopped fresh parsley and grated parmesan cheese
