Buttery, sweet carrots & herbs simply prepared in your slow cooker with such little effort!
Do carrots really need to be cooked in a slow cooker you may ask?
Well, sometimes it’s just easier to throw part of your dinner in a pot and not think about it until you’re ready to serve!
I peeled and chunked 2 1/2 pounds of carrots and put them in my Instant Pot with 1 1/2 cups of water and a teaspoon of kosher salt
Set your slow cooker on high for 2 hours or low for 4 hours or until the carrots can be easily pierced by a fork
Drain, return the carrots to the pot and add in 2 tablespoons of butter, 1/4 cup of honey, some fresh herbs such as parsley, basil or dill and kosher salt & black pepper
Stir until the butter & honey are melted and serve!
