Citrus Roasted Asparagus

Asparagus is in season here in the Northeast and we’re definitely taking advantage!

I’ve chosen to enhance this tender veggie with the citrusy flavor of orange zest and the saltiness of soy sauce. Yum

Snap the woody ends off of one bunch of asparagus and measure out 1 tablespoon of olive oil, one tablespoon of soy sauce, the zest of one orange, a 1/4 teaspoon of kosher salt and one teaspoon each of black pepper and garlic powder

I put a sheet of parchment on a baking tray for easy clean up

Drizzle the olive oil over the asparagus, roll them around so they are covered in the oil and sprinkle on the kosher salt, black pepper and garlic powder

Put the tray in a 400 degree oven for 10 minutes

Remove tray, add the orange zest and soy to the asparagus and put back in the oven for another 5 – 7 minutes until the thick part of the spears can be pierced easily with a fork, but not mushy

Less than 20 minutes, oven to table!

Ingredients

1 bunch of asparagus

1 tablespoon of olive oil

1 tablespoon of soy sauce

Zest of one orange

1/4 teaspoon of kosher salt

1 teaspoon garlic powder

Directions

Preheat oven to 400 degrees

Place asparagus on baking sheet lined with parchment; drizzle with olive oil, roll asparagus around so they are covered in the oil and sprinkle with kosher salt, black pepper and garlic powder

Roast for 10 minutes; remove tray, add the orange zest and soy to the asparagus and put back in the oven for another 5 – 7 minutes until the thick part of the spears can be pierced easily with a fork
