Chorizza Pizza

We are always looking for new ideas and flavors on family pizza night and this may just be one of our all time favorites

Chorizo Pizza or just “Chorizza” for short

This combination of spicy sausage, onions, fresh cheese and herbs will make you a believer!

You will need 16 ounces of pizza dough, 1 pound of fresh chorizo, 1 large onion, 6 ounces of grated mozzeralla cheese, 8 ounces of Queso Fresco and fresh cilantro

Now if you have never had Queso Fresco, it literally means fresh cheese and it lives up to it’s name and enhances many Mexican style dishes

Heat 2 tablespoons of extra virgin olive oil over medium heat, add in your chorizo and cook breaking the sausage into smaller bits as you go, until nicely browned about 8-10 minutes

The reason I cook the chorizo first is that I love the oils that are left behind.  They really flavor and caramelize the onion very well

So peel and chop your onion, add to the pan and toss to coat in the oil

Cook for 6-8 minutes or until the onions are very tender

Add your sausage back in and remove from the heat

Spread your dough out on a greased pan, or a pizza stone, as I’m using here

Evenly spread your sausage and onion mixture over the dough, then sprinkle with the shredded mozzeralla

Place in your 375 F preheated oven for 20-25 minutes or until the cheese is bubbly and lightly browned and the crust is golden

Let the pizza rest for 5-6 minutes, then top with your crumbled Queso Fresco and chopped fresh cilantro

You will not be disappointed!!
