Sweet stuff

Rolo Caramel Cookies

Our daughter, Marin, loves to bake.  I mean LOVES to bake! And we’re all happy to be her taste testers!

This is such an easy recipe for kids to make since it only has 4 ingredients!  And they’re delicious… a soft chocolate cookie filled with gooey caramel… yum!

You’ll need one box of chocolate cake, 2 eggs, 1/3 cup of oil and a 12 ounce bag of Rolo caramel chocolates

Unwrap the Rolos and set aside.  This is a somewhat arduous job and best done by the little baker in your house

Combine the cake mix, eggs and oil

Scoop out enough of the dough to cover each Rolo.  Form into a ball and drop into a bowl of white sugar

Place each ball on a sheet pan lined with a silpat mat, parchment or cooking spray

Bake at 350 degrees F for 7-8 minutes

When cooled, sprinkle with powdered sugar and watch them disappear!
