Honey and Chipotle Glazed Chicken

The glaze for this grilled chicken is a real winner

You get some sweet, some tang and a touch of smokey heat

A perfect accompaniment for some nice whole chicken legs

We are starting off by trimming any excess skin or fat off of 5 whole chicken legs, then place them on a sheet pan

Next you will need about a teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder, along with 1 tablespoon of chili powder

Rub the legs with some extra virgin olive oil then sprinkle each leg with your seasonings

Place on the grill over indirect heat, meat side up, the indirect heat will act like a convection oven, roasting the chicken while also imparting grilled flavor

Cook for 10 minutes

Turn (not flip) and cook another 6 minutes

While they’re cooking, lets make a glaze

You will need 3/4 cup of honey, a tablespoon of dijon mustard and 2 teaspoons of chipotle sauce

Add all ingredients into a bowl and whisk together, taste and adjust as needed

To make chipotle sauce, you will need chili’s in adobo, which you can find in the international aisle of most large grocery stores

Typically they come in 7 ounce cans

I like to blend the peppers and sauce in a food processor until smooth

You can add this to many dishes and sauces as it will add a smoky and delicious heat

Now back to our chicken

Flip your chicken and glaze the bottom cook 5 minutes, then flip and glaze and cook another 5 minutes

Now keep the skin side up and continue to glaze and cook until a thermometer inserted into the thickest part of the chicken reads 170 F

Remove and let rest 10 minutes before serving
