Boiled Eggs on Avocado Toast

I have been eating soft boiled eggs and toast for breakfast my whole life and I have seen and read many different approaches to making these eggs

I have also made this for myself since I was about 8 years old, so this is my take

Place your eggs in a pot and cover with cold water until fully submerged and place over medium heat and bring to a rapid boil

As soon as your eggs reach this rapid boil, time them for 2 minutes and 30 seconds

Here is where things get tricky…the size of the eggs

You may need to adjust the timing depending upon how you like the doneness of your egg.  A few seconds less if you like a more runny egg or a few seconds more for a firmer egg

Once your timer goes off, immediately remove your eggs and run them under cold water to stop the cooking process

Crack them open with a spoon

At this point you can serve this about a hundred ways

Soft boiled over avocado toast

So I get it, you may not yet be on board with avocados, I wasn’t either for a long time, but I have to say, given the right recipe or preparation you will be hooked!

Here I have a Haas avocado that I will cut lengthwise in half and remove the pit

I will then score the meat of the avocado lengthwise and width-wise

Next scoop the flesh with a spoon into a bowl and mash with a fork

At this point you can spread this on some nice toast (if your not an avocado fan, this would be the moment for butter)

Now top with your boiled egg, along with some kosher salt and ground black pepper to taste

Ingredients

2 large eggs

4 cups of water

1 avocado

2 pieces of bread toasted

kosher salt

ground black pepper

Directions

Place your eggs in a pot and cover with cold water until fully submerged and place over medium heat and bring to a rapid boil.  As soon as your eggs reach this rapid boil, time them for 2 minutes and 30 seconds.  Depending on the size of the egg this will normally yield a yolk that is a little runny and a little solid.  Adjust this time as needed

Once your timer goes off, immediately remove your eggs and run them under cold water to stop the cooking process.  Crack them open with a spoon

Toast 2 pieces of bread.  Slice an avocado in half lengthwise.  Spin the halves to open. remove the pit.  Using a knife score the flesh lengthwise and width-wise.  Scoop out the flesh using a spoon into a bowl and mash with a fork

Spread the avocado onto toast.  Then top with your boiled agg and season with kosher salt and ground black pepper
