Grilled Shrimp with Pesto

It’s summer and it’s grilling time

It’s also time for simple, fresh ingredients and really flavorful dishes, like the one we are about to prepare

Let’s start with 2 pounds of peeled and deveined shrimp

We are going to season this pretty simply and let the shrimp speak for themselves

You will need 4 grated garlic cloves, 2 tablespoons of extra virgin olive oil, 1 tablespoon of paprika and a teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

Add all your ingredients into your bowl of shrimp, using your hands to combine

I’m going to let you in on a secret…shhh…I was planning on putting these bad boys on skewers, wow, what a great idea

Then I realized I didn’t have any

Don’t call 911 yet, there is an alternative, called a grill pan!

Yes, I could just lay the shrimp on the grill, but lets save a little pain here.  This pan will hold the shrimp while allowing the grill smoke and flavors to come through

Lay your shrimp out on the pan and place over medium direct heat, so all burners on but at around 400 F

After about 2 – 2 1/2 minutes, give them a flip

When firm and opaque in color, it is time to remove them, around 2 minutes more

We served this with our Basil Pesto and Tuscan Panzanella Salad

Ingredients

2 pounds of peeled and deveined shrimp

4 grated garlic cloves

Simply Sunday’s Basil Pesto for serving

Directions

Season your shrimp with 4 grated garlic cloves, 2 tablespoons of extra virgin olive oil, 1 tablespoon of paprika and a teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder.  Add all your ingredients into your bowl of shrimp, using your hands to combine

Lay your shrimp out on a grill pan (or use skewers and place directly on the grill) and place over medium direct heat, so all burners on but at around 400 F.  Cook 2 – 2 1/2 minutes, give them a flip. When firm and opaque in color, it is time to remove them, around 2 minutes more
