Grilled Mini Meat Loaf

I’m a huge fan of meat loaf

I mean it is so versatile that you could almost eat it everyday and never have two that are the same

Once you try this version I know your going to love it.  Not only are we making it a personal sized meat loaf, we are going to stuff it with cheese and grill it

We are going to use 3 pounds of ground turkey

I’m also going to add 6 slices of bacon, that I will cut lengthwise then dice.  This will add flavor and some fat to the lean turkey meat

Next you will need 3 large eggs, whisked, 1 cup of bread crumb (plus more if needed), 1/4 cup of ketchup, 1 tablespoon of dijon mustard, 1 tablespoon of Worcestershire Sauce and 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

Add all your ingredients to the meat

Using your hands gently fold everything together until well combined, if the meat doesn’t bind, you can add a little more bread crumbs

Now for the fun part

We are going to add cheese.  I’m going to use mozzarella because it is going to melt nicely and become gooey and delicious

I have an 8 ounce block that I’m cutting into 1/2 inch thick slices

Take 1 cup of the meat mixture into your hand

Make an indent lengthwise with a slice of cheese, then fold the meat over the cheese

Form the meat into an oblong loaf

After your done forming them, I like to place them in the freezer for 10 minutes to firm them up before grilling

Preheat your grill to around 350 F

Place your meat loaves (this recipe will yield 7-8), over indirect heat and cook 10 minutes

While they are cooking let’s make a glaze

The glaze will have similar flavors as what you put in the meat mixture.  This will tie it together nicely

You will need 1 cup of ketchup, 2 tablespoons of brown sugar, 1 tablespoon of dijon mustard and 1 tablespoon of Worcestershire Sauce

Place all ingredients into a bowl and whisk to combine

Lets get back to the grill

After the first 10 minutes are up, turn (not flip) your loaves to produce those nice hash marks and cook another 6 minutes

Next, flip them and apply your glaze

Cook another 6-8 minutes or until cooked through

Remove them to a sheet pan and allow them to rest at least 5 minutes

Serve them up and watch them disappear!

3 pounds of ground turkey
