Banana Muffins

Am I the only one who gets super happy when the bananas on the counter start to over ripen??  It can only mean one thing…

BANANA MUFFINS!

This is a great recipe from my Mom’s old red cookbook that she’s been making for years and now I make them all by myself. Kids can bake too!

You need 1 cup of sugar, 1/3 of a cup of room temperature butter and 2 eggs

Cream the butter and sugar in a mixer until well combined

Add in the eggs and mix again until incorporated

Now for the mash-up!

You’ll need 1 1/2 cups of very ripe bananas

Mash them together in a bowl with 1/3 cup of water

My mom always uses a potato masher and so do I!

Add the mashed banana to the butter-sugar mixture and stir to combine.

Add in 1 2/3 cups of flour, 1 teaspoon baking soda, 1/4  teaspoon baking powder and a pinch of salt

Stir until moistened, don’t overmix. It’s OK if my Dad is tough but not my muffins

Line a muffin tin with paper liners and fill each cup about 3/4 of the way full and place in an oven that has been preheated to 350 degrees F

Bake for 15-18 minutes or until a toothpick comes out cleanly

My rule is that I freeze two to save for my PopPop

Ingredients

Directions
