Slow Cooker Caramelized Onions

If I think of my favorite toppings on a steak or a burger, caramelized onions are in the top three

 Cheese is first, of course

As much as I love the taste of these slightly sweet, richly roasted onions, I certainly don’t love standing over a pan of onions slowly stirring for 45 minutes

Everyone loves an onion facial, right??  Wrong.  Enter slow cooker

I’ve found the perfect way to coax the deep flavors from the onions without much effort at all.  Thinly slice 4 pounds of Vidalia or other sweet onion & place in a slow cooker

Melt 3 tablespoons of butter and pour over onions.  Sprinkle with kosher salt and toss well.  Cover and set on low for 8 hours

I’m nosey, so I peeked after a couple hours even though you shouldn’t open your slow cooker.  This is what they looked like… a little softened, but not browned.  Put the lid back on Susan

So after about 8 hours, this is what these guys looked like

Since I’ve broken the cardinal rule of opening the crock pot again, I may as well add in the last few ingredients

To help with the caramelization and to add a deeper sweetness, I’ve added in 1 tablespoon of brown sugar and for a little zing, 2 teaspoons of balsamic vinegar

Mix well and put the lid back on.  This will take about another 2-3 hours to be perfectly caramelized

I must confess, since I was making these for a BBQ we were having and didn’t want my house to stink for days like onions, I actually put the slow cooker on the front porch. True story.  Kind of funny to me… maybe not to my neighbors

Taste and season with kosher salt and black pepper if desired

It may seem like a lot of time to spend just to make onions, but there really is minimal active time.  You can plan ahead and put these on overnight, or like me, silly early in the morning

The recipe makes quite a bit and leftovers (if any) will store for up to 5 days in the fridge

Ingredients

4 pounds of Vidalia or other sweet onions

3 tablespoons melted butter

kosher salt & black pepper to taste

1 tablespoon brown sugar

2 teaspoons balsamic vinegar

Directions

Thinly slice 4 pounds of Vidalia or other sweet onion & place in a slow cooker; melt 3 tablespoons of butter and pour over onions.  Sprinkle with kosher salt and toss well.  Cover and set on low for 8 hours

Add in 1 tablespoon of brown sugar and 2 teaspoons of balsamic vinegar; mix well and put the lid back on and continue to cook another 2-3 hours

Once onions reach the desired level of caramelization, stir well and season to taste with kosher salt and black pepper
