Balsamic Marinated Pork Chops

Let’s make dinner simple tonight

How about pork chops marinated in a balsamic vinaigrette, then grilled?

Sounds simple and delicious enough to me

A vinaigrette is basically oil mixed with some form of acid, like balsamic vinegar or citrus such as lemon

Lets start with our balsamic vinaigrette

You will need 1/4 cup of balsamic vinegar, 2 tablespoons of olive oil, 1 tablespoon of dijon mustard, 1 tablespoon of honey, 2 cloves of garlic, 2 sprigs of rosemary and 1/2 teaspoon each of kosher salt, ground black pepper and crushed red pepper flakes

Place all ingredients into a food processor and blend to combine

I’m just cooking dinner for us tonight so I have 4 boneless pork chops that I’m going to trim of excess fat from

Place your chops in a large zip lock baggie, pour in the vinaigrette, push the air out of the bag and seal

Allow to marinate for at least 1 hour, overnight would be even better

Remove your chops from the refrigerator and allow them come to room temperature before grilling

Heat the grill up to 400 F.  We will be cooking these over medium direct heat

Place your chops on the grill and cook for around 5 minutes

Give them a half turn from left to right and cook another 5 minutes

Flip and cook another 3 minutes

Turn from right to left and cook another 2 minutes or until around 155 – 160 F internal temperature

Remove to a pan and let rest for at least 10 minutes before serving

We served this over a bed of arugula with some reduced balsamic drizzled over top

Ingredients

 4 boneless pork chops

1/4 cup of balsamic vinegar

2 tablespoons of extra virgin olive oil

1 tablespoon of dijon mustard

1 tablespoon of honey

2 garlic cloves

2 sprigs of fresh rosemary

Directions

In a food processor add 1/4 cup of balsamic vinegar, 2 tablespoons of olive oil, 1 tablespoon of dijon mustard, 1 tablespoon of honey, 2 cloves of garlic, the leaves from 2 sprigs of fresh rosemary and 1/2 teaspoon each of kosher salt, ground black pepper and crushed red pepper flakes, then blend

Trim the excess fat from 4 boneless pork chops and place them in a zip lock baggie.  Pour in your marinade.  Force any air out of the bag and seal.  Marinate for at least an hour, or even better, overnight

Heat your grill up to 400 F.  Take the chops out of the refrigerator and bring up to room temperature before grilling.  Place your chops on the grill and cook for around 5 minutes  Give them a half turn from left to right and cook another 5 minutes.  Flip and cook another 3 minutes.  Turn from right to left and cook another 2 minutes or until around 155 – 160 F internal temperature.  Remove to a pan and let rest for at least 10 minutes before serving
