Chicken Salad

So, you have some left over chicken

Could have been from a grilled chicken or a roasted chicken or even from a rotisserie chicken you bought at the grocery store

Doesn’t really matter.  In our house leftover chicken is transformed into pot pie, soup or even one of our favorites…

Chicken Salad

What I love about making chicken salad is that you utilize leftovers in a great way and you really have a blank canvas to make something awesome

So we happen to have around 10 ounces of chicken left over from another dinner

Trim the chicken of all skin, excess fat and anything else you wouldn’t want in your salad

Dice the chicken into small chunks as evenly as you can

I like my salads to have texture, color and obviously flavor

Hence, vegetables

I judge the veggies by the amount of protein, so for this salad I’m using 1 celery stalk, 1/2 red bell pepper, about 6 small lengths of scallion and 1/4 cup of fresh parsley

I’m going to slice the celery and pepper into very thin strips

Then I’m going to chop them finely

Add these and your chicken into a mixing bowl

Next, lets chop our scallions and parsley and add them as well

Okay, now here is where you can really be a chicken salad hero

The spices!

You can honestly go anywhere you want in the world with the right spices… Asia, Morocco, Spain, India, etc

All I can really say is let your imagination inspire you!

I’m using 1/2 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

For the kicker?

1 teaspoon each of paprika and yellow curry powder

Curry you say?

Yes I do!

  The curry just adds something you would not expect, warmth, depth and flavor.  I dare you to try it

Now for the dressing

Here is the thing about the wet ingredients, since I’m making this recipe from leftover chicken the amount of wet ingredients will change depending on the amount of meat

So add a little at a time and taste, remember you can always add more, but its hard to take away

I’m starting with 3-4 tablespoons of mayonnaise and 2 tablespoons of ranch dressing (ranch is my secret ingredient, so don’t tell anyone)

Give everybody a gentle mix to incorporate

We served this on toasted bread with dill pickles on the side

Ingredients

10 ounces of left over chicken

1 celery stalk

1/2 red bell pepper

6 scallions

1/4 cup of fresh parsley

1/2 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

1 teaspoon each of paprika and yellow curry powder

3-4 tablespoons of mayonnaise

2 tablespoons of ranch dressing

Directions

Thinly slice 1 celery stalk, 1/2 red bell pepper and chop about 6 small lengths of scallion and 1/4 cup of fresh parsley.  Add them and your chicken to a bowl

Next add in 1/2 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder.  Also add in 1 teaspoon each of paprika and yellow curry powder
