Sparkling Peach Sangria

It’s like biting into a big, fat, juicy sweet peach.  I can’t think of a better description for this cocktail.  Ok, wait, maybe it’s like biting into a deliciously refreshing big, fat, juicy sweet peach?

All I know is Sparkling Peach Sangria demands the best peaches you can find.  The rest falls into place

No surprise that I’ve been at the farm market and that’s where I picked up these beauties

I chose 4 peaches… both yellow and white just for a contrast

Slice them up and add them to a pitcher

Pour in a bottle of your favorite chilled white wine.  I’m using a chardonnay

Toss in a handful of fresh blackberries or raspberries

Add in a cup of peach schnapps & stir

Refrigerate for at least an hour.  I find it’s even better to combine the ingredients up to this point early in the day before your guests arrive.  That way, the sangria is icy cold and has had the chance to meld flavors for hours.  Makes me thirsty just talking about it

Add some fruit to each glass and top two thirds full with the peach sangria

But wait, there’s more!  Let’s add in some bubbly!

Top each glass of sangria with your favorite chilled prosecco or champagne

Ingredients

3-4 cups of ripe peaches

One 750ml bottle of chilled white wine

1 cup peach schnapps

1 cup of fresh blackberries or raspberries

One 750 ml bottle of chilled prosecco or champagne

Directions

Slice peaches and add them to a pitcher; pour in a bottle of your favorite chilled white wine.  Toss in a cup of blackberries or raspberries and one cup of peach schnapps

Stir gently and chill for at least one hour

Add fruit to each serving glass and fill 2/3 of the way with peach sangria; top with chilled prosecco or champagne
