Lobster Rolls

So it’s time to go back to our vacation spot for the blog

I would be remiss if I didn’t include at least one picture of a lighthouse!


Now we have already discovered a great recipe here

But I think it is time for some more seafood inspiration from our trip to


A major staple in all of New England is lobster rolls

I mean everywhere you go you can get a lobster roll (believe it or not, even in a McDonalds)

So when I say everywhere, I mean everywhere

So lets talk lobster

We came home with a bunch of steamed whole lobsters so we took three for this recipe


Which once removed from the shell yielded about 1 pound of lobster meat which we cut up


Now depending on where you go, lobster rolls can vary

Some have a mayonnaise base….some are just tossed in browned butter

We are taking a more traditional route with a bit of a Simply Sundays’ flair

We used 1 celery stalk, 2 scallions, 2 tablespoons of fresh parsley, 1/4 cup of mayonnaise and 1 teaspoon of Old Bay seasoning

We don’t want to overpower the delicious lobster meat with too much mayo, so be conservative and taste as you go


Give your celery, scallions and parsley a nice chop


Add them to your lobster


Next up, add in your mayo and Old Bay


Give everybody a gentle mix and place into the refrigerator until your ready to serve (this will allow the flavors to meld)


Now this next step is crucial and separates the good lobster rolls from the okay lobster rolls

It’s the bun!

The hot dog roll has to be a split top and as far as I’m concerned, it needs to be toasted with some butter

So spread some butter on the sides of the roll, get them into a hot pan

And toast them up!

Now fill them with that delicious lobster meat and serve!

1 pound of lobster meat

1/4 cup of mayonnaise

1 celery stalk

2 scallions

2 tablespoons of fresh parsley

1 teaspoon of Old Bay Seasoning

4 split top hot dog rolls

2 tablespoons of butter


If using whole lobsters, remove the meat from the claws and tail and give it a rough chop.  Place into a large mixing bowl

Chop your celery, scallions and parsley.  Add them to your lobster along with your mayonnaise and Old Bay.   Give everybody a gentle mix and place into the refrigerator until your ready to serve

Butter your split top hot dog rolls and toast them in a hot pan.  Fill with your lobster meat and serve
