Mixed Berry Pie

We have just returned from a wonderful vacation in Maine

One of the things you hear about all the time in Maine is the blueberries. Unfortunately for us, we were a couple of weeks too early for ripe Maine blueberries

Then there was a streak of luck… we came home just in time for New York blueberries to be at peak season and let me tell you they can hold their own!

My son and daughter stayed the better part of a week with their Aunt Liz who always plans fun filled days for them

Fortunately for us, blueberry picking was one of these treats!

And when I say they brought us home some berries, well I mean it!

So even though blueberries are the star of the show here, we are making a mixed berry pie so we will need 3 cups of blueberries, 1 cup of strawberries (stems removed and sliced), 1 cup of raspberries, 1 cup of blackberries and the juice and zest of 1 orange

Add the berries and the zest to a pot (reserve the orange juice for now)

Next up, we will need 1 cup of sugar, 2 tablespoons of flour and 2 tablespoons of vanilla

Add the sugar and vanilla to the berries and start them simmering, allowing them to cook down for 10-12 minutes

As the sugars and berries break down they will make a syrupy juice for the pie

Next whisk the flour and reserved orange juice together and add to the berry mixture as a thickener

Stir all this together

Remove the berries from the heat and set aside allowing to cool completely and set up

You can even sprinkle in 1 teaspoon of fruit pectin and stir it in to help with the thickening process

Preheat your oven to 350 F

Next we are rolling out 2 discs of our Basic Pie Dough on a floured surface

Then cover a 9 inch pie plate with the first disc of dough

Pour in the filling and cover with the second rolled out disc of dough

Pinch the top and bottom crust together to form a seal and then using 2 fingers on one hand and 1 finger on your other hand flute the edges of the crust

Continue all the way around

Whisk 1 egg and using a pastry brush, egg wash any exposed pie crust to help get a golden color, then sprinkle with some sanding sugar

Make 4 small slits in the top of the pie to act as vents to allow heat to escape (which will keep the crust from cracking)

Place in the oven and bake 45-50 minutes or until the crust is a golden brown

Remove and allow to completely cool, then refrigerate

Serve with a dollop of whipped cream
