Bacon Cheddar Quiche

Real men eat Quiche!

True story!

When I was growing up it seemed that quiche was something the ladies served up at a brunch and the guys passed over it

I personally love quiche

The can be as versatile as you want them to be and you can serve it for breakfast, brunch, lunch and dinner

Like a frittata, it’s  a dish that you almost always throw together with what you have hanging out in the fridge

If you ask my daughter however, she will say that a quiche is better

Why you might ask?

Because typically a frittata doesn’t have the delicious pie crust bottom!

We are going to start with 1 disc of our Basic Pie Dough

Preheat your oven to 350 F

Roll out the dough

Then form the dough inside of a pie plate

Place in the oven and bake for 10 minutes

This will set up the crust and give your quiche more texture

Now for the filling

We are going to start with 1 dozen eggs

Add the eggs into a large mixing bowl, along with a 1/4 cup of milk and give them a nice whisk

Next you will need 1 1/2 cups of shredded sharp cheddar, 1 cup of shredded mozzarella, 12 slices of cooked and crumbled bacon, 10 ounces of frozen spinach (thawed and drained), 1 onion chopped and sauteed and 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder

Note:  Cook the bacon and onion ahead of time and allow to cool completely so they  do not start to cook the eggs when you add them in

Place all of the ingredients into the whisked eggs and fold together

Pour the mixture into the pie shell and and move the ingredients around to evenly disperse them

Place in the oven and bake for 35-45 minutes or until a sharp knife inserted in the center comes out clean

Place on a rack and allow to rest for at least 10 minutes

Slice and serve!
