Pineapple Grilled Chicken

I was in the mood for something Asian or Hawaiian inspired that I could cook on the grill

We had some pineapple, teriyaki and ginger so I felt pretty confident I could come up with something tasty

I’m going to start by making a pineapple grilling sauce

We will need 1 – 20 ounce can of pineapple chunks in its juice, 1/2 cup teriyaki sauce, 4 tablespoons of honey and 1 tablespoon of fresh grated ginger

Place the pineapple chunks into a chopper and blend

Place the pureed pineapple and the pineapple juice into a saucepan along with the teriyaki, honey and grated fresh ginger and whisk to combine

Place over low heat and simmer 10-12 minutes or until the sauce is thickened

Remove and allow to cool

Next up is the chicken

I’m starting with 5 boneless and skinless chicken breasts that I ‘m removing excess fat from

Then I sliced them in half lengthwise

Next season both sides with kosher salt, ground black pepper, garlic powder, onion powder and paprika

Heat the grill up to around 375 F over direct heat (all burners on)

Place your chicken on the grill and cook 2-3 minutes

Turn the chicken (not flip) and cook another 2 minutes

Baste with the pineapple sauce

Flip and continue basting

Remove from the  heat when a thermometer inserted into the thickest part of the chicken registers 165 F

Let the chicken rest 10 minutes

Top with additional pineapple sauce, chives and crushed red pepper flakes and serve!
