One Pot Pasta

Such a perfect weeknight meal… I love a dinner I can get on the table in under 30 minutes AND that tastes delicious!

Best part is that you already have the ingredients in your pantry!

You’ll need a 12 ounce box of linguine (or spaghetti), 12 ounces of diced tomatoes with juice, 4 1/2 cups of water, 1 onion and 4 garlic cloves

The herbs and spices we’ll use are 1/4 teaspoon of red pepper flakes, 1 teaspoon each of dried basil, dried oregano, garlic and onion powders and kosher salt and black pepper to taste

Pour the water and can of diced tomatoes with juice into a stockpot.  Add in the bay leaf and herbs and spices.  Give them a quick stir

Thinly slice the onion and garlic cloves and add to the pot

Break the pasta in half and mix all of the ingredients

Bring to a boil over high heat, stirring occasionally with tongs to make sure the pasta doesn’t stick together

Cook for 9 minutes until al dente and the liquid is mostly absorbed

Give a stir and season again with kosher salt and pepper if necessary

Serve with grated parmesan cheese and fresh basil

Ingredients

4 1/2 cups of water

one medium onion

4 garlic cloves

 1/2 teaspoon red pepper flakes

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

kosher salt and black pepper to taste

Fresh basil and grated parmesan for serving

  1. Susan gave me this recipe after I said I can not cook. It is easier than easy to do and comes out great! If I can do it anyone can! Just shows even I can cook a delicious healthy meal with a little help from Simply Sundays!
