The cold weather is here
You can feel it in the air and see it in the trees, you can even smell it
It’s the time of the year for sweaters and the warm crackle of a fire place
It’s also time for soup!
Yes I said soup. Soup is one of the original comfort foods and is very overlooked as far as I’m concerned
Why make homemade soup when you can get any variety in a can?
Because it is easy and just tastes better and there is nothing as good and satisfying as a hot bowl of soup
Here is a favorite of ours and we hope you will love it as well
We are starting off with 2 onions, 2 celery stalks and 1 teaspoon each of kosher salt and ground black pepper
Peel the onions and give them and the celery a nice chop
Heat 2 tablespoons of extra virgin olive oil in a pot and add in the onions, celery, salt and pepper
Cook 5-6 minutes or until tender
Next up we will need 8 hot Italian sausages (you can substitute sweet Italian sausages)
Remove the sausage from their casings and add to the pot
Cook 8-10 minutes or until the sausages are browned
Chop them into smaller bits as they cook
Next we will need 8 cups of chicken stock and 1 cup of dried lentils

I like to rinse the lentils and pick over them to ensure there are no stones or grit
Add the lentils into the pot and cook for 1-2 minutes
Add in the stock, cover and bring to a boil, reduce heat and simmer for 30-35 minutes or until the lentils are tender
Now for some greens
We are using a large bunch of kale that we have rinsed thouroughly
Remove the main part of the stem and chop
Add the kale to the soup, bring to a boil, reduce to a simmer and cook 5-6 minutes or until the kale starts to wilt a bit
Now for the kicker, add in 1 tablespoon of red wine vinegar
It adds such a nice bright taste to the soup, you will be hooked
We served the soup with some crusty bread and fresh shredded parmesan cheese!

Ingredients
8 hot Italian sausage links
2 onions

1 bunch of fresh kale
1 tablespoon of red wine vinegar
2 tablespoons of extra virgin olive oil
Optional for serving

fresh shredded parmesan cheese
Directions

Thoroughly rinse 1 bunch of fresh kale. Remove the main part of the stem and chop the kale. Add the chopped kale to the soup, bring to a boil, reduce to a simmer and cook 5-6 minutes or until the kale starts to wilt a bit Stir in 1 tablespoon of red wine vinegar
Serve with crusty bread and fresh shredded parmesan cheese (optional)
