Indian Chicken Patties

My wife has a friend who is originally from India

Of course we asked for some recipes

 His sister graciously gave us a bunch and we would certainly love to share them with you!

I mean literally hand wrote a bunch of recipes…how awesome is that?

Now, this first recipe can be a starter, a main course or even a snack.  It is a patty of ground chicken or turkey that has wonderful warm flavors that just scream India

Lets get started

We are using 2 pounds of ground meat

Next we will need  1 onion, 4 garlic cloves, 2 eggs, 1 tablespoon of freshly grated ginger and 1/4 cup of parsley

Peel and chop the onion, peel and grate the garlic and ginger, whisk the eggs and chop the parsley

Add these ingredients to the ground meat

Next up is the seasoning

We will need 1 tablespoon of smoked paprika, 2 teaspoons of Garam Masala (Indian spice blend),  2 teaspoons of chili powder, 1 teaspoon of cumin, 2 teaspoons of green curry paste and 1 teaspoon each of kosher salt and ground black pepper

Add all your spices to the meat mixture including the juice from half of a lemon

Using your hands, gently mix the meat

If you find it too wet add a little bread crumbs

Place the rest of the bread crumbs in a sheet pan

Measure out 1/2 cup of meat mixture into the palm of your hand

Form a patty and coat both sides in bread crumb

Set aside on a sheet pan covered in wax paper

Chill until your ready to use

Heat up around 2 inches of extra virgin olive oil in a pan over medium heat

While that’s heating, lets make a dipping sauce

We will need 1/2 cup of plain yogurt, 1/3 cup of ranch dressing and 1 teaspoon of Harissa hot sauce (or a hot sauce you prefer)

Add all ingredients into a bowl and whisk together and chill

Place your patties in the oil but don’t over crowd them

Cook them in batches 3-4 minutes per side

Remove them to a wire rack over a sheet pan to drain any excess oil and sprinkle them with a bit of kosher salt

Allow them to rest a few minutes

Then serve with the dipping sauce

Ingredients

2 pounds of ground turkey or chicken

1/2 of a lemon juiced

2 cups of bread crumbs

Directions

Peel and chop 1 onion, peel and grate 4 garlic cloves and 1 tablespoon of ginger.  Whisk 2 eggs and chop 1/4 cup of fresh parsley.  Add this to the meat mixture

Next up season the meat mixture with 1 tablespoon of smoked paprika, 2 teaspoons of Garam Masala (Indian spice blend),  2 teaspoons of chili powder, 1 teaspoon of cumin, 2 teaspoons of green curry paste and 1 teaspoon each of kosher salt and ground black pepper

Squeeze the juice from half of a lemon over the meat mixture and using your hands gently combine all the ingredients.  If the mixture is loose sprinkle with some breadcrumbs to help bind it

Place the rest of the bread crumbs in a sheet pan.  Measure out 1/2 cup of meat mixture into the palm of your hand.  Form a patty and coat both sides in bread crumb.  Set aside on a sheet pan covered in wax paper.  Chill until your ready to use

For the dipping sauce
