Deconstructed Chicken with Apple Stuffing

   When I hear that a recipe is “deconstructed”, I automatically think short cut

In this case, it’s true.  I wanted chicken and stuffing but not all the work

Rather than a whole chicken, I used parts

Rather than mix up stuffing, the ingredients go right on a sheet pan

Easy peasy

Cut about 4 cups of crusty bread into 1″ cubes

Cut up 2 cups of apples (I used one red and one green), 2 cups celery & 1 tablespoon of fresh sage

 

Arrange on a sheet pan and drizzle with about 2 tablespoons of olive oil and a sprinkle of kosher salt & black pepper

Place the “stuffing” in the oven for about 15 minutes to soften the apples and celery and to toast the bread a bit

The smell of the sage and toasty bread reminds me of Thanksgiving… mmm…

 

I’ve used 5 lbs of chicken legs & thighs, trimmed of excess fat.  You can remove all the skin if you’d rather

I like the crispy skin and the flavor it gives to the bread “stuffing”

Sprinkle with our Everyday Seasoning of kosher salt, black pepper, onion powder and garlic powder and some paprika to add smokiness

 

Place the chicken parts evenly on top of the stuffing mixture and bake for 35-40 minutes

The internal temperature of the chicken should register 165-170 F

Remove from the oven and let things rest at least 10 minutes

So many delicious flavors all on one pan!  There’s nothing “deconstructed” about the taste of this meal!

Place the chicken parts evenly on top of the stuffing mixture and bake for 35-40 minutes, or until the internal temperature of the chicken registers 165-170 F

    I was upstate NY this weekend and felt the fall air at night. It made me want to cook some comfort food. I remembered loving this recipe so I have all the Ingredients waiting for me tomorrow! It’s only two of us so my husband loves having the leftovers for lunch!
