Asian Pork Stew

Let’s face it, we are all pressed for time and we still want our families to enjoy a delicious home cooked meal

This isn’t always that easy

That’s where the crock pot comes in, you can make many delicious dishes in a crock pot without the bother of standing over it and watching all day, allowing you to spend more time with your family

This recipe is a simple pork stew with Asian flavors that I know your family will love

I’m starting off with 2 pounds of pork stew meat that I seasoned with a teaspoon each of kosher salt and ground black pepper

I’m using an Instant Pot which allows you to sear in it as well as slow cook

If you using a standard slow cooker, just brown the meat in a pan and set aside (or you can skip the browning part completely)

Add 2 tablespoons of olive oil to the pot and start searing the meat in batches

Once the meat has been browned, remove from the heat and set aside

If using the Instant Pot, remove the meat and set aside and turn the pot off

Next up we will need 1 large onion and 2 large carrots

Peel them and give them a chop and place in the bottom of the slow cooker

Place the pork on top of the carrots and onions

Next up we will need 1 red bell pepper, 1 fresh pineapple (pealed and cored), 5 garlic cloves and a teaspoon of fresh peeled ginger

Place the garlic and ginger in a food processor and finely chop

Add them to the slow cooker

Next chop the pineapple up

Now for some of that Asian flavor

We will need 1/2 cup of teriyaki sauce, 1/2 cup of soy sauce, 2-3 tablespoons of honey, 1 tablespoon of Gravy Master, 1 tablespoon of fish sauce and 1 teaspoon of sesame oil

Add these into a mixing bowl

If there was any leftover pineapple juice from the fruit, feel free to add that in as well

Whisk to combine

Pour this into the slow cooker

Cover and cook on high for 3-4 hours or on low for 6-8 hours

Once the time is up the pork should just fall apart

The juice is going to be a little loose

This is fine to eat as is, but if you want to thicken it, melt 2 tablespoons of butter over medium low heat

Whisk in 1/4 cup of flour and allow to cook until bubbling and lightly browned

Stir this into the stew and allow to thicken for 5 minutes

We served this garnished with some fresh parsley, scallions, crushed red pepper flakes and a side of white rice

Ingredients

2 pounds of pork stew meat

1 large onion

2 large carrots

1 red bell pepper

1 fresh pineapple (peeled and cored)

5 garlic cloves

1 teaspoon of fresh ginger

1/2 cup of teriyaki

1/2 cup of soy sauce

2 – 3 tablespoons of honey

1 tablespoon of Gravy Master

1 tablespoon of fish sauce

1 teaspoon of sesame oil

2 tablespoons of extra virgin olive oil

1 teaspoon each of kosher salt and ground black pepper

1/4 cup of flour

2 tablespoons of butter

Optional garnish

fresh parsley

scallions

crushed red pepper

Directions

Season the pork stew meat with 1 teaspoon each of kosher salt and ground black pepper Heat 2 tablespoons of extra virgin olive oil and start searing the meat in batches.  Once the meat is browned remove from heat and set aside

Peel and chop 1 large onion and 2 large carrots.  Place them in the bottom of the slow cooker.  Top them with the seared pork.  Place 5 garlic cloves and 1 teaspoon of fresh, peeled ginger in a food processor and finely chop.  Place these in the slow cooker.  Chop the pineapple and red bell pepper and place in the slow cooker

In a large mixing bowl, whisk together  1/2 cup of teriyaki sauce, 1/2 cup of soy sauce, 2-3 tablespoons of honey, 1 tablespoon of Gravy Master, 1 tablespoon of fish sauce and 1 teaspoon of sesame oil.  If there is any juice left over from the pineapple you can whisk that in as well.  Pour this over the everything in the slow cooker.  Cover and cook on high for 3-4 hours or on low for 6-8 hours

To thicken the gravy, melt 2 tablespoons of butter over medium low heat.  Whisk in 1/4 cup of flour and cook until bubbling and lightly browned.  Stir this into the stew and allow to thicken for 5 minutes.  Garnish with fresh parsley, scallions, crushed red pepper and serve with a side of white rice
