Chicken Cacciatore

“Cacciatore” literally means hunter

So “Chicken Cacciatore” is basically hunters style chicken

It is typically served with onions, herbs, tomatoes and sometimes with wine as well

I have had different variations of this dish but here is our take

We are starting with 8 bone in, skin on chicken thighs

Trim the thighs of any excess skin or fat

Sprinkle each thigh with kosher salt and ground black pepper

Next we will need a cup of flour for dredging

Add the flour to a bowl and coat both sides of the thighs

Shake off any excess flour and set the chicken aside

Repeat until all of the chicken is coated in flour

Heat 2 tablespoons of extra virgin olive oil in an oven proof pan

Lay your thighs in skin side down

Don’t over crowd them (cook in batches if you have to)

Brown them 4-6 minutes, then flip them and brown 4 minutes more

Remove from the pan and set aside

Preheat your oven to 350 F

Now we will start building up a sauce

We will need 3 bay leaves and 1/2 teaspoon of crushed red pepper flakes

Add these to the pan and cook around 2 minutes or until they start to slightly smoke and give off aromatics

Next we will need 1 large onion, 3 bell peppers (I like to use different colors), 5 garlic cloves and 1/2 teaspoon each of kosher salt and ground black pepper

Peel and chop the onion, core and chop the peppers, and dice the garlic

Add all the veggies to the pan, sprinkle with the salt and pepper and cook 6-8 minutes

Next we will need 1 cup of dry red wine (like a Cabernet) and 10 ounces of tomato paste

Add in the wine to deglaze the pan

Allow this to simmer for 3-4 minutes to cook off some of the alcohol

Add in the tomato paste, mix and cook another minute or two

Next we will need 1 cup of chicken stock an two – 28 ounce cans of crushed tomatoes

Add the stock to the pan, then the crushed tomatoes and mix together

Nestle the chicken in the sauce

Place the pan in the oven and cook 30-40 minutes or until he chicken reaches your desired doneness

Remove from the oven and let rest for 10 minutes

We served this with a side of pasta and the delicious sauce

We as sprinkled this with chopped fresh parsley and crushed red pepper

Ingredients
