Chicken Tortellini Soup

This soup combines the homemade goodness of freshly made chicken stock with pre-made tortellini

You can certainly make your own tortellini, but this dinner is a perfect example of what to make on a busy weeknight

Just 3 ingredients.. one 20 ounce package of fresh tortellini, 8 cups of chicken stock and one cup of chicken diced into small cubes

Bring 8 cups of chicken stock to a rolling boil (you can also use veggie stock to make it vegetarian)

Homemade Veggie Stock

Pour the fresh tortellini into the boiling stock and set your timer for 4 minutes

When the timer goes off, add in the one cup of reserved chicken that you have from making the chicken stock

You can skip this step if you used store bought stock

Return to a boil for another minute until the chicken is heated through and the pasta floats

Ingredients

8 cups Homemade Chicken Stock

20 ounce package of fresh tortellini

1 cup diced chicken reserved from stock

Directions

Bring 8 cups of chicken stock to a rolling boil in a stock pot over medium high heat; pour a 20 oz. package of fresh tortellini into the boiling stock and set your timer for 4 minutes

When the timer goes off, add in the one cup of reserved chicken that you have from making the stock

You can skip this step if you used store bought stock

Return to a boil for another minute until the chicken is heated through and the pasta floats
