Shake & Bake Chicken

Who doesn’t remember Shake & Bake Chicken from your childhood??

I’m pretty sure it was a staple in my house.  And why not?

It’s easy enough to drop some chicken pieces in a baggie,  add in some breadcrumbs and spices, shake ’em and bake ’em!

Rather than buy the box shake and bake mix, I prefer to make it myself.  For one thing, it’s less expensive and more importantly, there are no strange additives

Measure out 2 cups of plain breadcrumbs, 1 tablespoon each of garlic and onion powders, 2 teaspoons of paprika, 1 teaspoon each of kosher salt and oregano and a 1/2 teaspoon of black pepper

Add ingredients to a jar and shake well to mix

This will last sealed in your pantry for up to 2 months

As a rule of thumb, I use 1/2 cup of shake and bake mix for every 2 pounds of chicken

I’m using just legs for this but you can use thighs as well

Add the mix and a few chicken parts at a time to a gallon sized resealable baggie.  Seal and shake, repeat until all the pieces are coated

Shake, shake, shake and place each piece on a sheet pan that is lined with parchment and sprayed lightly with cooking oil

Pop into a 375 degree F oven for about 45 minutes or until the internal chicken temperature reaches 170 F

Ingredients

For the Shake & Bake Mix

2 cups of plain breadcrumbs

2 teaspoons paprika

1 teaspoon kosher salt

1 teaspoon oregano

1/2 teaspoon of black pepper

For the Shake & Bake Chicken recipe:

1/2 cup of Shake and Bake mix

2 pounds of chicken legs (or thighs, or legs & thighs)

Directions

Preheat oven to 375 degrees F
