If you’ve ever read the Harry Potter books or watched the movies, you’ll know exactly what a Butterbeer is
It’s non-alcoholic since it was portrayed as a “kids drink”, but I don’t care what your age is… this stuff is DE-licious!
Oh so buttery & creamy… let’s get to it!
And we only need a few ingredients for this tasty copycat drink and we’re virtually on our way to The Three Broomsticks!
Cream soda, whipping cream and butterscotch topping
When we were at Harry Potter World in Universal, we preferred the ‘frozen’ version of this drink so that’s what I’m making
Maybe because it was 90 degrees??? Highly probable
Oh, and can I mention that I stood on line in the hot sun for 30 minutes just to buy a couple of these??
Fortunately I can now make them in a few minutes in my own kitchen without a line
Measure out 2 cups of the cream soda and pour into a shallow pan or ice cube tray. You’ll want to freeze for a couple of hours. It’s ok if the soda isn’t totally frozen solid
Scrape it with a fork (like a granita!)
Next, let’s whip up some cream. I’m using a Kitchen Aid mixer and I chill the bowl and whisk in the freezer beforehand
Pour a cup of cream in the mixer and turn to medium high. Beat until soft peaks form then drizzle in some of the butterscotch syrup. I added in a few tablespoons, tasted and thought it could be a bit sweeter and added a little more
Add the frozen cream soda to a blender along with 2 cups of chilled cream soda and a few tablespoons of butterscotch syrup
Divide between two frosty mugs, top with a healthy dollop of whipped cream and drizzle with additional butterscotch syrup
Get ready for a frosty mug of buttery deliciousness!
