Lemony Roasted Asparagus

When I was a kid, asparagus came from a jar, packed in liquid

And I thought I actually liked it… until I found fresh asparagus!

Add some fresh lemon zest and roast in the oven and this simple, healthy side can’t be beat!

Preheat your oven to 400 degrees

Trim the woody ends off of your fresh asparagus

You only need to remove the bottom inch, inch and a half

Layer trimmed asparagus in a small sheet pan and zest one fresh lemon

Sprinkle the fresh lemon zest over the asparagus and drizzle with olive oil

Next, evenly coat the asparagus with the everyday seasoning of kosher salt, black pepper, garlic & onion powders

Now we’re ready to roast!

Roast in the oven for about 7 – 9 minutes until a sharp knife can easily pierce through

These are thin asparagus – thicker stalks might need an additional minute or two

With just a few ingredients and only a little effort, you now have a side worthy of co-starring in any meal!

one bunch of fresh asparagus

zest of 1 lemon

olive oil

1 teaspoon each of kosher salt, black pepper, garlic & onion powders
