Summer Berry Salad

Sweet Summer berries, creamy avocados and the crunch of nuts… this salad is the bomb! A flavor bomb!

Oh, and let’s not overlook the sweet and tangy raspberry vinaigrette

This salad belongs on your favorite recipe list

It’s super easy to assemble…  only very little chopping and prep work.  My kind of salad!

You’ll need field greens, a mix of berries, kiwi, avocado and crunchy nuts

Place 6 cups of field greens in a large bowl

Measure out one cup each of fresh raspberries, blueberries & blackberries.  Cut 2 kiwi and 2 avocado into a small dice

Toast 1 cup each of pecans and slivered almonds

Now for the quick assembly

Layer the fruit over the greens and top with the toasted nuts

Fun fact… an avocado is a fruit and actually considered a large berry with one seed.  You learn a new thing every day!

The simple Raspberry Vinaigrette gives this fresh salad a bit of acid and is the perfect accompaniment

Mix 1/2 cup of seedless jam, 1/3 cup cider vinegar, 1/4 cup of sugar and 2/3 of a cup of vegetable oil in a jar with a lid or a cruet.  Add in 1 tablespoon of sesame seeds and 1 teaspoon of kosher salt

Shake until thoroughly mixed

Drizzle the Raspberry Vinaigrette over each serving
