Grilled Peaches with Mascarpone

There are so many delicious peach dessert recipes but this is a simple way to enjoy the fruit without much fuss

Juicy, sweet peaches drizzled with honey and served with creamy & tart mascarpone cheese… mmm

You can use store bought mascarpone or make this copycat version

Add 8 ounces of softened cream cheese, 1/8 of a cup of sour cream and 2 tablespoons of whipping cream

Blend well.  You can add a little powdered sugar if you’d prefer some sweetness, but keep in mind we’re going to serve with a drizzle of honey

Each serving is half of a peach, so I’m using 2 large, ripe peaches.  Cut in half and remove the pit

Place on a pan and drizzle with olive oil

Heat grill to medium high and grill the peaches face down for 5 minutes, flip and grill another 5-7 minutes

You want the peaches to be softened but not mushy

Remove from grill and let cool slightly

Serve with the mascarpone and a drizzle of honey

or

8 ounces of copycat mascarpone

8 ounces of softened cream cheese

1/8 of a cup of sour cream
