Grilled Peaches with Mascarpone

Juicy, sweet peaches drizzled with honey and served with creamy & tart mascarpone cheese… mmm

There are so many delicious peach dessert recipes but this is a simple way to enjoy the fruit without much fuss

Grilling the peaches brings out the natural sweetness of the fruit and caramelizes the sugars.  The marscapone tempers the sweetness with its rich tanginess

You can use store bought mascarpone or as I typically do, make this copycat version

Add 8 ounces of softened cream cheese, 1/8 of a cup of sour cream and 2 tablespoons of whipping cream to the bowl of a mixer and blend well

You can add a little powdered sugar if you’d prefer some sweetness, but keep in mind we’re going to serve with a drizzle of honey

Each serving is half of a peach, so I’m using 2 large, ripe peaches.  Cut in half and remove the pit

Place on a pan and drizzle with olive oil

Heat grill to medium high and grill the peaches face down for 5 minutes, flip and grill another 5-7 minutes

You want the peaches to be softened but not mushy

Remove from grill and let cool slightly

Ingredients

2 large, ripe peaches

Drizzle of olive oil

8 ounces of mascarpone

or

8 ounces of copycat mascarpone (recipe below)

8 ounces of softened cream cheese

1/8 of a cup of sour cream

2 tablespoons of whipping cream

Honey for serving

Directions

Cut 2 large, ripe peaches in half and remove the pit; place on a pan and drizzle with olive oil
