We love healthy steel cut oatmeal for breakfast. So hearty, filling and we especially love it packed with sweet apples and bold spices like cinnamon and nutmeg
Steel cut oats take about 30 minutes to cook on the stove top and if you’re like me, you don’t have a spare 30 minutes in the morning! Enter slow cooker!
What is the difference between rolled oats and steel cut oats?
Rolled oats, or old-fashioned oats, are oat groats that have gone through a steaming and flattening process. They readily absorb liquid and have a mild flavor and soft texture
Steel cut oats on the other hand absorb less liquid and have a firm texture and a slightly nutty taste. They have a longer cooking time than rolled oats and hold up well to overnight slow cooking like we’re going to do here
I chose gala and Fuji apples because I like the sweetness and because they were on sale Yes, I shop by what looks good AND price
Measure out 3 cups of almond milk, I’m using plain unsweetened but you can use sweetened, vanilla… whichever flavors you prefer
I have 1 cup of steel cut oats, 1/4 cup of brown sugar, 1 teaspoon of cinnamon & 1/2 teaspoon of nutmeg
You’ll want to core, peel and cube the apples
Our friends at Zulay Kitchen sent us this apple corer to try out. Not gonna lie! It’s super sharp and works awesome!
Toss all of the ingredients into your slow cooker and give a stir
I’m using the Instant Pot as a slow cooker for this. Cool part is that I can delay the start time. I can get everything set up in the pot the night before and choose the start time so that the overnight oats are ready when we get up in the morning
Cook on low for 6 hours
When you come in to the kitchen in the morning you’ll be greeted with the delicious smells of apple and cinnamon. Mmmmmm
Now only if the Instant Pot could pour my coffee! 🙂
Give a stir and serve
To make this easier on the busy weekday mornings, I portion out servings of the oatmeal in mason jars for a quick grab, heat and go breakfast
Feel free to top with some chopped nuts, dried fruit, chia seeds… whatever floats your boat! (Or fills your belly!)

Ingredients
2 apples
3 cups of almond milk
1 cup of steel cut oats
1/4 cup of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
Optional toppings such as chopped nuts, dried fruits, etc.
Directions
Measure out 3 cups of almond milk, 1 cup of steel cut oats, 1/4 cup of brown sugar, 1 teaspoon of cinnamon & 1/2 teaspoon of nutmeg
Core, peel and cube the apples
Toss all of the ingredients into your slow cooker and give a stir
Cook on low for 6 hours; give a stir and serve with additional toppings if desired
