So here is my take on a tangy Barbecue sauce
This is a great sauce for ribs, pulled pork, chicken and just about anything else you like
This recipe makes quite a bit so you will have some left over to store
We are going to start with 1 red bell pepper, 1 green bell pepper, 1 onion, 1 apple and 1 garlic clove
I cut up the green pepper and put into a chopper. I’m blending this to almost a puree
Same thing goes with the red pepper
Add to a sauce pan with 2 tablespoons of extra virgin olive oil
Peel and core your apple, add to the chopper along with your onion and garlic
Stir to combine. Place pan of medium low heat and simmer for 10 minutes, stirring occasionally
While that is cooking let’s move on
In a large bowl add one 28 ounce can of crushed tomatoes
Next you will need 2 cups of ketchup, 1 cup of water, 1/2 cup of apple cider vinegar and 1/3 cup of Worcestershire Sauce
Add these into the bowl of crushed tomatoes
Next you will need 1 cup of dark brown sugar, 1/2 cup of honey and 1/4 cup of mustard
Add into the bowl with your other ingredients
Now for some spices
1 tablespoon of smoked paprika, 1 tablespoon of chili powder and 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
Using a whisk, stir all ingredients until incorporated, pour into your veggies on the stove and fold together
Bring to a boil, then lower to a simmer
Cook for 30 minutes stirring occasionally
Once done, I let it cool for a bit, then I hit it with the immersion blender to grind up any little bits that may be left. You can also do this in a blender
This recipe yields around 2 quarts (8 cups) of sauce. For a smoky version add 1 tablespoon of liquid smoke
We serve this on, well, anything you like barbecue sauce on!

Directions
Chop and then blend your peppers. Peel your onion and peel and core your apple. Chop then blend them along with the garlic. Heat 2 tablespoons of olive oil over medium heat in a sauce pan. Add your veggies and simmer for 10 minutes stirring occasionally
In a large bowl combine, one 28 ounce can of crushed tomatoes, 2 cups of ketchup, 1 cup of water, 1/2 cup of apple cider vinegar, 1/3 cup of Worcestershire Sauce, 1 cup of dark brown sugar, 1/2 cup of honey, 1/4 cup of mustard, 1 tablespoon of smoked paprika, 1 tablespoon of chili powder and 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
Whisk all ingredients to combine. Pour into the sauce pan with your veggies. Bring to a boil, lower heat to a simmer and cook for 30 minutes, stirring occasionally. Once done, and cooled, blend again or use an immersion blender to blend up and left over bits of veggies
This yields roughly 8 cups. For a smoky version add 1 tablespoon of liquid smoke.
