Beer Brats

Flavorful bratwurst cooked in a beer, onion and butter bath then seared on the grill!

Bratwurst are great pork sausages that you can fry, bake and grill and are always sure to please a crowd

We are going to take them to another level

 Our bratwurst spend their cooking time in a nice relaxing beer, onion and butter bath (they love this)

This is going to add loads of fantastic flavor

I mean,  what goes better with a brat then beer?

We are starting off with 15 bratwurst

We happen to have 10 spicy and 5 original

I learned a trick from my father in law

I’m going stick toothpicks in the original so I can easily tell them apart after cooking

This is for those guests that avoid spice

Now you can do this next step in a foil pan in the oven or on the grill or you can slow cook these on high for around 2 1/2 hours

We are using our Instant Pot pressure cooker to speed things up

So just place the brats in the Instant Pot in layers

 Next up, we will need some simple ingredients

 At least 2 dark beers like an ale and 1-2 lighter beers

We’ll also need 1 onion, 1 stick of butter and 1 teaspoon each of kosher salt and ground black pepper

Peel and chop the onion

Cut the butter lengthwise, then in half, then into chunks

Add them to the brats and sprinkle with the salt and pepper

Let’s start pouring in the beer (yeah!)

Add in the 2 ales and 1 pilsner and let the foam subside

Add in the remaining beer just until you cover the brats

Now, this next bit may terrify you

Beer may be left over

My advice is to drink it and get rid of any evidence!

Cover the brats and pressure cook on high for 10 minutes with natural release

At this point the brats are cooked fully and infused with a great beer flavor

Time to eat?

Nope… we are not done yet

  Let’s give them a sear for some extra flavor

You can hit the grill at this point, the broiler as well or even in a pan

We are using our flat top

Be sure to sear both sides

Once they have a nice brown sear,  I put them back in the beer bath to rest and absorb even more great flavor!

You can store them this way in the refrigerator overnight and just heat them in the instant pot the next day!

When you’re ready to serve, place in a dish with the beer onions

Remember to remove the toothpicks

Let your guests top them any way they want!!

Ingredients

15 bratwurst sausages

1 onion chopped

1 stick of butter cut into chunks

1 teaspoon each of kosher salt and ground black pepper

2 Ale style beers

1 – 2 pilsner style beers

Directions

Layer the brats in the Instant Pot

Peel and chop the onion.  Cut the butter lengthwise, then in half, then into chunks

Sprinkle the onion, butter, salt and pepper over the brats

Next, pour in the 2 ales and 1 pilsner.  Let the foam subside.  Add enough of the last beer just to cover the brats

Cook on high pressure for 10 minutes and do a natural release.  If using the slow cooker function, cook on high 2 1/2 hours

Remove the brats and sear for about 3 minutes on both sides.  Place back into the beer bath until your ready to serve
