Pomegranate Vinaigarette

I love dressing a salad with a light and tasty vinaigrette and I especially love using a homemade vinaigrette that I can shake together in literally minutes!

You can juice fresh pomegranate seeds (arils) yourself or use a good quality store bought pomegranate juice.  To deepen the flavor of the dressing, I reduce one cup of the juice over medium heat for about 10 minutes before I mix up the vinaigrette

To your cooled,  reduced pomegranate juice, add 2 tablespoons of honey, one teaspoon of dijon mustard,  2 tablespoons each of white balsamic vinegar and water, 1/3 cup olive oil and a pinch of kosher salt and black pepper

Shake well in a mason jar and serve over your favorite salad greens

Ingredients

 1 cup of pomegranate juice

2 tablespoons of honey

one teaspoon of dijon mustard

2 tablespoons of white balsamic vinegar

2 tablespoons of water

1/3 cup olive oil

A pinch of kosher salt and black pepper

Directions

Reduce pomegranate juice in a small pot over medium heat for 10 minutes; cool

Add all ingredients to a mason jar or cruet and shake until thoroughly combined

Store covered in the refrigerator for a week
